This study aims to determine the effects of nutrition knowledge on the use of nutrition facts labels in emerging adults by defining the nutrition education status.

Abstract

Purpose

This study aims to determine the effects of nutrition knowledge on the use of nutrition facts labels in emerging adults by defining the nutrition education status.

Design/methodology/approach

For this cross-sectional study, 919 young adults, aged 18–24 years, were recruited. Participants trained by dietetic professional at least 2 h per week during the period of at least one education period were considered as having nutrition education. Food label use, specific circumstances and different food products were recorded. The participants were also asked about their attitudes regarding food label use with a questionnaire including 15 products.

Findings

Nutrition facts label is mainly used when buying a product for the first time, a product of an unknown brand or comparing different companies’ similar products, regardless of nutrition education status. Participants with nutrition education had a higher nutrition facts label use and they use the score for specific food products including breakfast cereal (p = 0.003), snacks (p < 0.001), beverages (p = 0.004), ready to eat soups (p = 0.004) and diet products for special occasions (p < 0.001). Mean total score of attitudes regarding food label use for participants who had nutrition education was found as 58.9 ± 6.1 and who did not have nutrition education was found as 51.7 ± 9.2 (p < 0.01).

Originality/value

Nutrition education, which is related to the nutrition facts label use, would be especially useful in helping people for the selection of healthier foods. As habits acquired from childhood will last for a lifetime, more effective nutrition education programs and nutrition label reading education programs should be designed. The findings need to be considered for promoting nutrition facts label use by developing nutrition education.

Abstract

Purpose

Resistant starch, defined as all starch and starch-degradation products not absorbed by small intestine of healthy individuals, is included in the diet of individuals due to its prebiotic characteristics and protective effects against diseases like colon cancer, type II diabetes, obesity and cardiovascular diseases. Some cooking methods are known as effective on resistant starch content of foods. The purpose of this paper is to explore the effect of various cooking methods on resistant starch content of foods.

Design/methodology/approach

Potential health benefits and functional features of the resistant starch have been emphasized in the recent years. This review includes up-to-date scientific findings in different studies on the effect of various cooking methods on resistant starch content of foods. Advantages and nutritional quality of resistant starch are included to topic.

Findings

Cooking methods including baking, steaming and autoclave cooking increased the amount of the resistant starch of foods, but cooking method such as pressure cooking decreased the amount of the resistant starch of foods. Boiling, frying, microwave cooking and extrusion cooking have the potential of increasing the amount of resistant starch, which depends on the source of starch and the process conditions. Although frying method has a high potential to increase the resistant starch content of foods, it is inconvenient to recommend frying to modify resistant starch content of foods due to detrimental effects of frying and products on health.

Originality/value

This paper focuses on the effects of various cooking methods on resistant starch content of foods, which offers a promising future for the inartificial development of the prebiotic content of diet. Due to its potential health benefits, appropriate cooking methods should be preferred to increase resistant starch content of foods.

The purpose of this study was to examine the potential association between the glycemic index (GI) and the glycemic load (GL) with early childhood caries in preschool children.

Abstract

Purpose

The purpose of this study was to examine the potential association between the glycemic index (GI) and the glycemic load (GL) with early childhood caries in preschool children.

Design/methodology/approach

This cross-sectional study collected data from 225 children aged 37–71 months in governmental nursery schools within the Altindag district of Ankara, Turkey. GI and GL values of foods and beverages were calculated using 2008 international tables of GI and GL. Dental examinations were done under daylight and by using a headlight. The prevalence of caries was obtained by calculating the number of the decayed, missing and filled teeth (dmft) index score or decayed, missing and filled surface (dmfs) index score.

Findings

There were significant differences in the dmft and dmfs scores according to GI groups (p = 0.022 for both). The multivariate models showed that children who consumed a high-GI diet had higher dmft scores compared to children who consumed a medium-GI diet (ß 1.48, 95% CI −1.48, 4.44), whereas children who consumed a high-GL diet had lower dmft score compared to children who consumed low-GL diet (ß 0.55, 95% CI −0.97, 2.07), however, they were not statistically significant.

Originality/value

Dietary total GI and GL did not significantly influence the caries experience of preschool children. Future studies should focus on the different age groups with a broader perspective.

Abstract

Purpose

The purpose of this study is to assess and compare awareness and knowledge of dental erosion among nutrition and dietetics (ND) and dental students.

Design/methodology/approach

The study was designed as a cross-sectional study. It was set in a university campus in Ankara, Turkey. In all, 947 undergraduate students (534 dental and 413 ND) with a mean age of 20.9 ± 1.99 years were included. The variables measured in this study were level of awareness and knowledge of dental erosion of students and their practice on the topic. For statistical analysis descriptive statistics, Chi-square, Fisher’s Exact and Mann–Whitney U statistics were used.

Findings

Not having heard about dental erosion was more frequently reported by ND students (33.9 per cent) (p < 0.001). Dental students had significantly higher scores in knowledge of dental erosion (11.19 ± 2.23) (p < 0.001). In both disciplines, total knowledge score was increased based on the students’ academic level (r = 0.522, p < 0.01 for dental students and r = 0.242, p < 0.01 for ND students). Their practice in terms of consumption of some acidic foods showed a difference (p < 0.001).

Originality/value

There is an inevitable need for oral health education for ND students and nutrition education for dental students to fill the knowledge gap for effective oral health. Nutrition dental education should be incorporated into undergraduate ND and dentistry curriculums and continuing education of these professionals. Furthermore, providing internships in dental facilities or clinics to undergraduate ND students that include oral health assessments, guidance on evidence-based prevention techniques, dietary counseling and referrals to dentists would provide an opportunity to gain more knowledge regarding dental-related nutrition subjects. To the authors’ knowledge, this is the first study to determine and compare dental erosion awareness, knowledge and practice among ND and dental students. Eliminating conflicts among dietetic and dental professionals is vital for improving patient health. This interdisciplinary inclination might be a shift toward a coordinated team approach for promoting oral health, prevention of dental diseases and intervention in dental diseases.

Abstract

Purpose

In the age of information, where people can have an easy access to knowledge, the ethical and content-based examination of dietitians’ sharing in the social media is an important step in determining what to share in the social media in the future. The purpose of this study was to analyse the content of Instagram shares of dietitians, a profession group that is becoming more and more widespread in Turkey.

Design/methodology/approach

Publicly available dietitian Instagram profiles, aiming specifically at those with =500 followers, were included in the study. The hashtag was chosen as #onlinediyet (Turkish for online diet). A total of 1,986 images were identified for analysis. When these images were identified, 883 images were excluded. Thus, overall 1,103 Instagram images were chosen to analyse during a week’s period. Each Instagram image was classified into one of seven categories by authors as food, individual, nutrition information, motivational, miscellaneous, physical activity and recipe. Food and individual groups were also coded into subgroups.

Findings

A descriptive analysis of the 1,103 online-diet-related images shared by dietitians showed that 53.5 per cent of the images were in food category. There were no differences between female and male dietitians in terms of categories of shared images (p > 0.05). Dietitians also shared individual images (34.5 per cent) including weight loss follow-up (56.2 per cent), self-portrait (22.0 per cent) and conversation with clients (14.0 per cent) images on Instagram.

Originality/value

The results of this study set a baseline for future studies. Given the rapid growth of this platform in recent years, not only the field of dietetics but also other health-care fields would benefit from clear guidelines about what information can or cannot be shared on social media.
